1. Lately, I’ve discovered that the brief side conversations in my life have been incredibly uplifting. I often don’t realize how much I need them until they happen. A quick text or a chat by the driveway can be a game-changer, gently bringing me back to myself.

2. I’ve been caught in a bit of a rut, both with food and life in general. Can I just blame the weather for this one? I’ve got that soft, grey feeling, but I know the best way forward is to acknowledge it. It’s okay to feel this way—I’ve been through it before, and the sun will shine again!

Today, let’s consider this a virtual coffee date! Imagine you’re strolling past my house, we stop to chat, I pet your dog, ask about your kids, your spring break plans, and then we dive into deeper topics like anxiety and shows like Severance.

## Dealing with Sick Kids and the Anxious Mom Syndrome

This week, I shared on Instagram about our kids being unwell. It has weighed heavily on my nerves. When they’re not okay, my anxiety spikes.

Their illnesses are typical—coughs, fevers, ear infections, and endless sleepless nights. But my mind races, ready to call an ambulance at any moment. Managing this constant vigilance while being sleep-deprived and sharing a tiny twin bed with my daughter these past nights has left me feeling drained.

What really surprised me was how many of you reached out, expressing similar feelings of anxiety—not just about sick kids at home, but the anxiety connected to it. Here’s what I’ve gathered from your responses:

– Your distress rises because your babies are upset but can’t tell you why.
– The constant question of whether you should bring them to the clinic or ER is always present.
– Even pet parents relate, feeling anxiety over not knowing what’s wrong with their furry companions.
– Parents with grown kids still experience these worries because, once a mom, always a mom.
– Medical professionals shared their anxieties too, despite seeing sick children every day. That was a bit humbling for me—imagining you all as invincible heroes without fears.

In my case, I know past medical trauma amplifies these worries—times when everything went unexpectedly wrong. I guess I’m in a funk—welcome to my March mindset! Maybe one day, I’ll learn to manage when the thermometer flashes “103.5” or when nights are interrupted by coughing fits. I’d love to hear your secrets if you have any.

## Cooking Adventures and Challenges

I’ve consistently made these chicken bowls weekly since January, mainly because of my love for that cilantro pesto. Additionally, I’ve baked plenty of berry muffins, worked on perfecting carrot cake cupcakes (stay tuned!), tried my hand at cottage cheese pizzas, repeatedly enjoyed sweet potato soup, and feasted on buffalo chicken burgers.

### Sharing the Cooking Rut

Even those who love cooking might find themselves in a rut occasionally. I have endless ideas, but I seem to lack the time and energy to bring them to life properly.

Life’s routine tasks—laundry, school runs, doctor visits, work, headlines, exercise, and diet—have felt more consuming lately. The perfect, peaceful moment to create a beautiful meal feels elusive, or perhaps I’m just struggling to make that space.

Interestingly, this cooking rut is sparking inspiration for a new SOS series! Experiencing these challenges inspires me to create practical solutions that many of us can relate to. This is my current project.

SOS recipes are my specialty, honest and relatable. This little setback is guiding me toward exciting new ideas, which I can’t wait to share around April or May. Stay tuned!

With everything going on, let’s not forget the small, comforting joy of indulging in a good TV show. It’s these simple pleasures that can provide a brief escape and a sense of normalcy amidst life’s chaos.## A Cozy Spring Coffee Date and TV Time

There’s something special about this time of year, especially when cozying up with some television and indulging in a treat like these irresistible gigantic chocolate chip cookies.

With our daughters in a routine that allows for consistent bedtimes and no evening commitments, Bjork and I cherish the time we spend unwinding together on the couch. By 9 PM, in my comfy pajamas, it’s our sacred hour of TV that really feels like a piece of paradise.

I’m selective about what I watch, favoring shows that strike the perfect balance between intriguing and thrilling. I steer clear of anything too graphic or intense to avoid sleepless nights induced by anxiety.

  • The Occasional Bachelor Episode

Out of all, Severance stands out remarkably. It’s a smartly written, complex, yet subtly eerie show with visuals that are simply stunning. Discussing it never seems to get old for me.

Hats off to those who create such captivating content. It has been a delightful escape and a source of joy for me recently.
